Fried Glutinous Rice w/Preserved Meat
Ingredients:
2 cups glutinous rice (450g)
2 tbsp dried shrimp (soake
2 tbsp chopped spring onion
2 tbsp coriander (roughly chopped
1/3 cup Chinese mushroom (soaked & diced)
1/3 cup preserved meat (roughly chopped)
1/3 cup preserved sausage (sliced)
Seasonings:
1 cups water
1/2 tsp salt
1 tsp chicken powder
1 tbsp light soy sauce
Directions:
1.Wash & rinse glutinous rice, add water to cover & soak for 2 hours.
2.Rinse and cut preserved sausage into thin slices,roughly chop preserved meat, cut soaked dried shrimps & Chinese mushroom into dice.
3.Heat 1 tbsp oil in the wok and saute all ingredients,remove.
4.Heat 3 tbsp oil again, add soaked lgutinous rice, fry over medium heat, sprinkle in 6 tbsp seasonings, mixing well, cover to cook in a medium low heat for 3 mins. Sprinkle in 6 tbsp seasonings again, fry & cover to cook. Repeat until the glutinous rice is completely cooked through.
5. Place all ingredients over rice & fry together with spring onion & coriander. Serve at once.
